Baked Haddock & Marinated Mushrooms

Recipe for Baked Haddock and Marinated Mushrooms

Fish is a fantastic source of lean protein.  Chock full of minerals and protein while light on the fat and calories, it is an all around wonderful food to include in your weekly meal plans.  We cooked up haddock fillets for our Valentine’s Day dinner, and it was a big hit.  Here’s the recipe so you can give it a try at home!

Baked Haddock with Marinated Mushrooms ( Heavily adapted from AllRecipes – I flew by the seat of my pants for most of this one)

What You’ll Need:

  • 1lb Haddock fillets (any white fish will do)
  • 1/2 lb fresh white mushrooms, sliced
  • 1/4 cup cider vinegar
  • 1 TBS fresh squeezed lemon juice
  • 1/3 cup water
  • 3 TBS olive oil
  • 2 cloves of garlic, minced
  • 1 TBS basil
  • 1 TBS parsley
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • Pepper to taste

What You’ll Do:

Mix together spices with liquid ingredients in a bowl.  Place fish fillets skin side down in a glass baking dish and cover with mushrooms.  Pour marinade over the top, cover the dish with aluminum foil, and let sit in the refrigerator for several hours (longer is better).  When you’re ready to cook, pre-heat your oven to 375F and cook until fish flakes with a fork, about 15-25 minutes depending on your oven and thickness of the fillets.
