Ingredients

- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup high quality hot cocoa mix
- 2 sticks unsalted butter, melted
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract or paste
- 12 ounces semi-sweet chocolate chips
- 2/3 cup vanilla marshmallow bits
Instructions
- Preheat oven to 350F. Line a 9x13 pan with aluminum foil sprayed with cooking spray. Set aside.
- In a small bowl, stir together flour, salt, baking powder, and hot cocoa mix.
- In a large bowl, mix together butter, sugar, eggs, and vanilla extract. Add dry ingredients to wet and stir until just combined. Fold in 1/3 (4 ounces) of the chocolate chips.
- Bake uncovered for about 30 minutes, or just until the brownies start to pull away from the edge. Sprinkle remaining chocolate chips onto the hot brownies and let sit for 3-5 minutes. Spread chips into a melted layer using a non-stick spatula and then sprinkle with marshmallow bits.
Notes
Use a high-quality hot cocoa mix that doesn't use powdered milk or other filler ingredients. This recipe was tested using Starbucks brand hot cocoa.
