Skinny Banana Bread

A lower saturated fat version of delicious banana bread using Greek yogurt and applesauce.

Ingredients

  • 3/4 cup dark brown sugar, packed
  • 2 large eggs
  • 2 tablespoons extra light olive oil
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons honey
  • 1/4 cup plain applesauce
  • 1 cup nonfat plain Greek yogurt
  • 3 over ripe bananas, mashed
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Grease two 8.5-inch by 4.5-inch loaf pans and set aside. Preheat oven to 325F.
  2. In a large mixing bowl, whisk together brown sugar with eggs, oil, vanilla, honey, applesauce, and greek yogurt. Stir in bananas and mix until smooth.
  3. In a second bowl, stir together both flours, baking soda, cinnamon, and salt. Add dry ingredients to the wet in 3 additions, stirring after each one. Stir until combined.
  4. Distribute batter evenly between loaf pans. Bake for 40 - 55 minutes or until a toothpick inserted into the center of the bread comes out clean, with just a few moist crumbs attached.
  5. Allow bread to cool in pan for 5 minutes, then turn out onto a cooling rack to finish cooling. Store cooled leftovers at room temperature, wrapped tightly or in an airtight container.

Notes

This bread is great to make in advance and tastes even better the second day. Serve with your favorite butter spread, jam, peanut butter, or drizzle with a little more honey.

Make sure your olive oil is 'extra light taste' or you will impart a stronger olive oil flavor into the bread.

You can fold in 1/2 cup of chopped walnuts into the batter if you like!
