Slow Cooker Applesauce Pork Tenderloin & Veggies

Ingredients

  • 1 boneless pork tenderloin (~ 2lbs)
  • 1/2 cup broth of choice
  • Salt and pepper
  • 2 cups unsweetened applesauce
  • 1 1/2 TBS honey
  • 2 TBS dijon mustard
  • 2 cups baby carrots or sliced carrots
  • 2 - 3 sweet potatoes, peeled and sliced

Instructions

  1. Heat a skillet on medium-high heat. Season the pork with salt and pepper. Sear the pork on each side until nice and brown. Remove from heat and set pork aside. Deglaze the pan with the broth and pour what's left in the skillet into the slow cooker.
  2. Add the applesauce, honey, and mustard to the slow cooker and stir together. Place the seared pork and vegetables into the slow cooker and stir things around a bit until coated in the sauce.
  3. Cook on low for about 8 hours or until pork is fall apart tender. Taste and adjust salt and pepper as needed.

Notes

The first step is optional, though it does add lots of extra flavor to the pork. If you are short on time, you can skip it and add the pork directly to the slow cooker.
Baby carrots will take longer to get fully tender, so I recommend placing them at the very bottom of the slow cooker so they are fully submerged in the sauce.
