Turkey Cheeseburger Biscuit Cups

Ingredients

  • 1 pound ground lean (93%) turkey
  • 1/2 cup yellow onion, minced
  • 1/2 cup of your favorite pasta sauce OR 1/2 cup ketchup
  • 1 TBS yellow mustard
  • 1 tsp Worcestershire sauce
  • 1 tube refrigerated biscuits (8-10 biscuits)
  • Shredded low-fat cheddar cheese, to taste

Instructions

  1. Preheat oven to 400F. Spray a muffin tin with cooking spray and set aside - you'll only use 8 to 10 of the wells, depending on the biscuits you use.
  2. In a skillet on medium heat, cook the turkey until no pink remains. Transfer turkey to a bowl and drain out the fat, reserving about 1 TBS in the skillet.
  3. Add the minced onion to the skillet and cook until softened. Stir in the ketchup or pasta sauce, mustard, and Worcestershire sauce. Return the cooked turkey to the skillet and let cook for 1-2 minutes and then remove from heat.
  4. Using a rolling pin, flatten out each biscuit to 2-3 times its original size. Press each biscuit into the bottom of the muffin wells and press them up the sides. How big you'll need to roll the biscuits will depend on the size of the original biscuit and the size of your muffin tin.
  5. Fill each biscuit cup with the ground turkey mixture and top with desired amount of cheese.
  6. Bake for about 12-14 minutes or until biscuits are golden on the edges and have puffed up.
