- 3/4 cup granulated sugar
- 1 cup flour
- 1/2 tsp baking soda
- Small pinch of salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 cup oil
- 2 eggs
- 1 jar (4oz) baby food, any fruit variety
- 1/2 cup chopped nuts, optional
Instructions
- Preheat oven to 350F.
- Using your hand or a mixer, combine all ingredients - except for the nuts - until well mixed. Fold the nuts into the batter. Pour into greased 8-inch cake pan (light metal works best, not glass or dark metal). Bake for about 25 minutes or until top is golden and a toothpick inserted into the center comes out with a few moist crumbs. Your oven may vary, so check early and often to avoid overbaking.
