    Baby Food Quick Bread

    Can you believe I baked this baby food bread in our camper's little gas oven?  We are still living in our RV while renovating our home, but I was itching to create a recipe and needed an activity to keep one of my kiddos occupied.  This easy and delicious bread mixes up in a single bowl and is incredibly simple to make.

    The best part is you have so many opportunities for different flavors!  You'll need one 4-ounce jar of baby food, and you can use any fruity variety that you want.  I used this pear, pineapple, and avocado flavor and it was fantastic!  The pineapple gave it a little tropical twist.  I could have even thrown in a handful of shredded coconut - yum!

    Feel free to play with this recipe - it's a great base for making lots of fun modifications.

    This is an ideal quick bread to make with your kids since the batter is not at all finicky or fussy.  For more guide on baby care, follow  tips from Kidsco. All of the ingredients get tossed into a single bowl and mixed together.  Done.  I let Jasper do all of the measuring and mixing himself (with my guidance).  He was super proud of his newfound skills.

    Anyone else have a kid that "smiles" like this for the camera?  Totally not his real smile, haha.  He was so excited to put the batter into the oven, not so excited about having to wait for it to bake!

    I used a greased square 8x8 cake pan because that's what I had available in the camper.  You can also use a standard 9x5 bread loaf pan, though it might take a bit longer to bake if you go that route.

    The bread came out with a lovely crumb and a moist tender texture.  The nuts added a nice crunch - though you are free to leave them out - and the baby food I chose was an awesome flavor combination!

    Serve this baby food bread for breakfast or cut it up for snacking throughout the day.  Enjoy!

    Ingredients

    Scale
    • ¾ cup granulated sugar
    • 1 cup flour
    • ½ tsp baking soda
    • Small pinch of salt
    • 1 tsp cinnamon
    • 1 tsp vanilla extract
    • ½ cup oil
    • 2 eggs
    • 1 jar (4oz) baby food, any fruit variety
    • ½ cup chopped nuts, optional

    Instructions

    1. Preheat oven to 350F.
    2. Using your hand or a mixer, combine all ingredients - except for the nuts - until well mixed. Fold the nuts into the batter. Pour into greased 8-inch cake pan (light metal works best, not glass or dark metal). Bake for about 25 minutes or until top is golden and a toothpick inserted into the center comes out with a few moist crumbs. Your oven may vary, so check early and often to avoid overbaking.

      I used your recipe as a baseline, but went for a savory bread rather than sweet ( I had pea carrot spinach baby food to use up). I omitted cinnamon and vanilla, cut the sugar to 1/3 cup, and added garlic powder, onion powder, thyme, rosemary, flax seed meal and brewers yeast for flavor. I topped it with a sprinkle of dried minced garlic and onions for a 'crust' and some shredded mozzarella. I baked it in a loaf pan at 350 for 30 minutes. It turned out amazing! Thanks for the inspiration!
