FORÂ BALSAMIC VINAIGRETTE
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic, peeled and minced
- Salt and pepper, several shakes each
FOR SKEWERS
- 10-12 ounces of pre-stuffed tortellini, any variety
- 10-ounce container cherry tomatoes
- 1 bunch fresh basil leaves
- 8 ounces fresh mozzarella
Instructions
FOR BALSAMIC VINAIGRETTE
- Combine all ingredients in a bowl and whisk to combine. Taste and adjust salt and pepper as desired. Set aside.
FOR SKEWERS
- Cook tortellini according to package instructions and drain well. Let cool for several minutes
- In a large mixing bowl, add tortellini with half of the balsamic dressing. If the dressing has separated while sitting, give it a whisk first.
- Stir to coat, then cover the bowl and let marinate in the refrigerator overnight. Store the remaining dressing in the refrigerator.
- Use full of half-size skewers and alternate cherry tomatoes, basil leaves, mozzarella, and tortellini in desired amounts.
- Whisk dressing and drizzle skewers with desired amount.
Notes
Any flavor of pre-stuffed tortellini can be used. I used 'chicken and cheese'
You can use full-length skewers or half-length if you want to make lots of appetizer-sized bites.
