Ingredients

- 1 3/4 cup white long-grain rice
- 1 14.5-ounce can coconut milk, full fat
- 1 3/4 cup cold water
- 1 large lime (or 2 small limes), zested and juiced
- 1/2 teaspoon salt
- Fresh cilantro for serving, optional
Instructions
- Thoroughly rinse rice until water runs clear.
- In the bowl of a rice cooker, combine all ingredients except for cilantro. Place lid on cooker and turn it on.
- Fluff rice and serve topped with fresh cilantro, if using
Stovetop Instructions
- Follow step 1 above. Add all ingredients except for cilantro in a saucepan over medium low heat. Bring to a simmer. Cover and cook for about 20 minutes or until most of the liquid is absorbed.
- Top with fresh cilantro, if using.
