This coconut lime rice combines creamy coconut milk and zesty lime for a simple yet flavorful side dish that's easily made in a rice cooker.

Ingredients

Scale
  • 1 3/4 cup white long-grain rice
  • 1 14.5-ounce can coconut milk, full fat
  • 1 3/4 cup cold water
  • 1 large lime (or 2 small limes), zested and juiced
  • 1/2 teaspoon salt
  • Fresh cilantro for serving, optional

Instructions

  1. Thoroughly rinse rice until water runs clear.
  2. In the bowl of a rice cooker, combine all ingredients except for cilantro. Place lid on cooker and turn it on.
  3. Fluff rice and serve topped with fresh cilantro, if using

Stovetop Instructions

  1. Follow step 1 above. Add all ingredients except for cilantro in a saucepan over medium low heat. Bring to a simmer. Cover and cook for about 20 minutes or until most of the liquid is absorbed.
  2. Top with fresh cilantro, if using.
