    Coconut Lime Rice is a simple, flavorful dish that combines the creaminess of coconut milk with a slight tang of lime. Easy to prepare and makes a great side dish for a variety of meals, especially Thai.

It’s a dish that’s as easy to make as it is delicious, with the creamy coconut milk and zesty lime bringing a fresh, twist to your table. Whether you’re cooking for a weeknight family dinner or impressing guests, this rice is a versatile side that pairs beautifully with everything from grilled chicken to spicy curries.

    Ingredients

    Time to gather and prep your ingredients. Here's what you need.

    • cold water
    • long grain rice
    • canned coconut milk, full fat
    • lime zest and juice
    • salt
    • (not pictured) fresh cilantro for serving, optional

    Instructions

    Making your own coconut lime rice can't be any easier. Here's what you do to bring it together.

    1. Step 1: First, rinse rice well. Then, in the bowl of a rice cooker, combine all ingredients except for cilantro.
    1. Step 2: Stir everything together.
    1. Step 3: Place lid on rice cooker and turn it on.
    1. Step 4: Fluff rice and top with fresh cilantro for serving.

    If you don't have a rice cooker, you can make this rice on the stovetop by combining ingredients into a saucepan and simmering, while covered, for about 20 minutes or until liquid has been absorbed and rice is fluffy.

    Hint: When serving, squeeze some extra lime juice on the rice for more of a kick.

    Storage

    Let leftover rice cool to room temperature. Store covered in the refrigerator for 2-3 days. To reheat, add a small amount of water (a few teaspoons or so) then cover and reheat on the stovetop or in a microwave-safe container.

    Cooled rice can be frozen for up to six months. Thaw in the refrigerator and reheat as indicated above.

    FAQ

    How do I fix mushy rice?

    Make sure that the uncooked rice is thoroughly rinsed to remove as much starch from the rice as possible.

    Is coconut lime rice sweet or savory?

    This is very much a savory recipe that will pair with all kinds of main dishes. The coconut and lime add richness and tang, but not sweetness.

    Ingredients

    Scale
    • 1 ¾ cup white long-grain rice
    • 1 14.5-ounce can coconut milk, full fat
    • 1 ¾ cup cold water
    • 1 large lime (or 2 small limes), zested and juiced
    • ½ teaspoon salt
    • Fresh cilantro for serving, optional

    Instructions

    1. Thoroughly rinse rice until water runs clear.
    2. In the bowl of a rice cooker, combine all ingredients except for cilantro. Place lid on cooker and turn it on.
    3. Fluff rice and serve topped with fresh cilantro, if using

    Stovetop Instructions

    1. Follow step 1 above. Add all ingredients except for cilantro in a saucepan over medium low heat. Bring to a simmer. Cover and cook for about 20 minutes or until most of the liquid is absorbed.
    2. Top with fresh cilantro, if using.
