Making your own coconut lime rice can't be any easier. Here's what you do to bring it together.
- Step 1: First, rinse rice well. Then, in the bowl of a rice cooker, combine all ingredients except for cilantro.
- Step 2: Stir everything together.
- Step 3: Place lid on rice cooker and turn it on.
- Step 4: Fluff rice and top with fresh cilantro for serving.
If you don't have a rice cooker, you can make this rice on the stovetop by combining ingredients into a saucepan and simmering, while covered, for about 20 minutes or until liquid has been absorbed and rice is fluffy.
Hint: When serving, squeeze some extra lime juice on the rice for more of a kick.
Storage
Let leftover rice cool to room temperature. Store covered in the refrigerator for 2-3 days. To reheat, add a small amount of water (a few teaspoons or so) then cover and reheat on the stovetop or in a microwave-safe container.
Cooled rice can be frozen for up to six months. Thaw in the refrigerator and reheat as indicated above.
