- 1 cup sugar
- 1 cup buttermilk
- 2/3 cup baking mix (such as Bisquick)
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 teaspoon pumpkin pie spice
Instructions
- Preheat oven to 350F. Coat a 9-inch pie pan with cooking spray.
- Combine all ingredients using a hand mixer (you can even put it in the blender!)
- Pour into prepared pie pan and bake until golden brown on top and still slightly jiggly. This can take between 30-45 minutes depending on your oven.
- Let cool or chill before serving so the pie has a chance to fully set.
- Store leftovers in refrigerator, but allow to come almost to room temperature for best texture when serving.
