Impossible Buttermilk Pie

  • 1 cup sugar
  • 1 cup buttermilk
  • 2/3 cup baking mix (such as Bisquick)
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon pumpkin pie spice


  1. Preheat oven to 350F. Coat a 9-inch pie pan with cooking spray.
  2. Combine all ingredients using a hand mixer (you can even put it in the blender!)
  3. Pour into prepared pie pan and bake until golden brown on top and still slightly jiggly. This can take between 30-45 minutes depending on your oven.
  4. Let cool or chill before serving so the pie has a chance to fully set.
  5. Store leftovers in refrigerator, but allow to come almost to room temperature for best texture when serving.
