Jack O Lantern Quesadillas

These jack o' lantern quesadillas are a great Halloween project! They are spooky, cheesy, toasty, and so much fun! Perfect for parties or a quick meal.

Ingredients

  • 8 flour tortillas
  • 1 1/3 cups shredded cheddar cheese, or more as desired
  • 3-4 tablespoons unsalted butter

Instructions

  1. Use a very sharp knife or X-Acto knife to cut Jack O Lantern faces in 4 of the tortillas.
  2. Add 1-2 tablespoons of butter in a large nonstick skillet and melt over medium heat. Add cut tortillas and toast on one side. Set aside.
  3. Add the rest of the butter and place the 4 uncut tortillas in the pan (you can do this in batches if you are using a small pan). Top each tortilla with cheese, letting it go all the way to the edge, and top with the cut-out tortillas, toasted side facing up.
  4. Heat until cheese is melted and the bottom of the solid tortillas are toasty. Do not flip!

Notes

You can use any kind of cheese that you want, and you can add additional items such as chicken, ham, crispy bacon, caramelized onions, scrambled eggs, etc.
