    Get into the Halloween spirit with these fun and festive jack o lantern quesadillas! With cheesy fillings and spooky faces cut into flour tortillas, they’re the perfect easy snack or meal for your Halloween celebrations.

    Jack o lantern quesadillas are a perfect lunch around Halloween when fun, themed foods take center stage. These cheesy quesadillas are great for the whole family to make together. The process of cutting out jack o' lantern faces in the tortillas is just so easy!

    Ingredients

    Here's what you'll need!

    • flour tortillas
    • shredded cheese (use cheddar, mexi mix, or whatever you like!)
    • butter

    Instructions

    Here's a step-by-step guide for bringing your jack o lantern quesadillas to life.

    1. Step 1: Use the end of a very sharp knife to cut faces into tortillas. If you want, you can also notch out a pumpkin stem for a more realistic look!

    1. Step 2: Melt butter in a non-stick pan over medium heat, and then heat the cut tortillas until toasted on one side.

    1. Step 3: Melt more butter in the pan, then add un-cut tortillas. Sprinkle cheese on top, then place cut tortillas on top with the toasted side facing up.

    1. Step 4: Heat until cheese is melted and the solid tortilla is toasted. DO NOT FLIP the quesadilla or the cheese will leak out!

    Hint: Watch the heat level of your stove. You don't want to toast the bottom of the tortilla too quickly or the cheese won't melt before the bottom gets burned!

    FAQ

    How do you keep the cheese from leaking out of Jack o Lantern quesadillas?

    The top tortilla, the one with the cut-out face, is toasted separately from the bottom tortilla, that stays solid. Once the cheese and top tortilla are added, do NOT flip the quesadilla!

    Can I use a cookie cutter to make quesadillas?

    Yes, absolutely. You'll end up with more waste, but you can add variety to your quesadilla platter by using bats, cats, ghosts, and other shaped cookie cutters.

    These jack o' lantern quesadillas are a great Halloween project! They are spooky, cheesy, toasty, and so much fun! Perfect for parties or a quick meal.

    • Total Time: 20 minutes
    • Yield: 4 quesadillas 1x

    Ingredients

    Scale
    • 8 flour tortillas
    • 1 ⅓ cups shredded cheddar cheese, or more as desired
    • 3-4 tablespoons unsalted butter

    Instructions

    1. Use a very sharp knife or X-Acto knife to cut Jack O Lantern faces in 4 of the tortillas.
    2. Add 1-2 tablespoons of butter in a large nonstick skillet and melt over medium heat. Add cut tortillas and toast on one side. Set aside.
    3. Add the rest of the butter and place the 4 uncut tortillas in the pan (you can do this in batches if you are using a small pan). Top each tortilla with cheese, letting it go all the way to the edge, and top with the cut-out tortillas, toasted side facing up.
    4. Heat until cheese is melted and the bottom of the solid tortillas are toasty. Do not flip!

    Notes

    You can use any kind of cheese that you want, and you can add additional items such as chicken, ham, crispy bacon, caramelized onions, scrambled eggs, etc.
