Simple Meatloaf with Spicy Glaze

Ingredients

  • MEATLOAF
  • 1.5lbs ground beef
  • 1 large egg
  • 1 onion, minced
  • 1/2 cup ketchup
  • 1/3 cup milk
  • 1 TBS Worcestershire sauce
  • 15 crushed saltine crackers
  • 1 tsp Dijon mustard
  • Salt & Pepper, to taste
  • FOR GLAZE
  • 1/2 cup ketchup
  • 1 TBS Worcestershire sauce
  • 1 tsp horseradish
  • 1 tsp hot sauce
  • 1/2 tsp coarsely ground pepper
  • Pinch of salt

Instructions

  1. Preheat oven to 350F
  2. In a large bowl, combine all meatloaf ingredients, mixing with your hands until combined.
  3. Form into loaf in a stoneware or metal baking dish sprayed with cooking spray or lightly-greased.
  4. In another small bowl, whisk together all glaze ingredients.
  5. Bake loaf, uncovered, for about 30 minutes.
  6. Spread glaze over top of loaf and continue baking for an additional 30 minutes or until a meat thermometer reads 160 degrees.
