    This is absolutely the yummiest protein shake I have ever made!  It's like drinking healthy pumpkin pie out of a glass.  We had several large cans of pumpkin in our pantry leftover from some holiday baking plans that never transpired and I wanted a way to use some of it.  Thus, this shake was born.  I've been drinking one every morning for the last 4 days and I have yet to tire of it.  My usual protein shake consists of a pretty basic mixture of frozen bananas and strawberries and I was wanting to branch out with a couple of new ideas this week.

    This pumpkin pie smoothie has earned an official spot in my usual rotation of breakfast shakes.  Don't be spooked by the addition of the banana - you can't really taste it, but it adds some nice texture and enhances the flavor of pumpkin rather than adding a pure banana flavor.  Please give it a try if you are a fan of pumpkin pie, I promise you won't be disappointed!

    Pumpkin Pie Protein Shake

    Ingredients

    Scale
    • 1 cup almond milk
    • ½ cup canned pumpkin (not pumpkin pie filling!)
    • ½ frozen banana
    • 1 scoop vanilla protein powder of choice
    • ½ tsp pumpkin pie spice
    • Couple splashes of vanilla extract
    • 3-4 ice cubes
    • ¼ tsp xanthan gum - optional, for thickening

    Instructions

    1. Blend all ingredients until smooth and frothy.

        We 've been using Optimum Nutrition (ON) Gold Standard!  I've tried the chocolate and vanilla flavors and have been really happy with it. 🙂
