    When I go to the effort to make a homemade ice cream - even though it's not difficult - I always reach for a base recipe that includes heavy cream, whole milk... and a lot of egg yolks.

    Homemade ice cream made with egg yolks tends to be creamier due to the presence of fat and emulsifiers in the yolks. Egg yolks contain a high amount of fat, which adds richness and creaminess to the ice cream. Additionally, the yolks contain emulsifiers, which help to mix the fat and water-based ingredients together and prevent them from separating.

    When making ice cream, a custard base is typically created by heating cream, milk, sugar, and egg yolks together. As the mixture heats, the egg yolks thicken and create a smooth, creamy texture. Once the custard is cooled, it can be churned in an ice cream maker to create a smooth and creamy frozen dessert.

    The fat and emulsifiers in the egg yolks also help to prevent ice crystals from forming in your triple chocolate ice cream. Ice crystals can give ice cream a gritty or icy texture, whereas a high-fat content helps to create a smooth and creamy texture. Overall, egg yolks are a crucial ingredient in creating a rich and creamy homemade ice cream.

    What Kind Of Ice Cream Maker Do I Need?

    If you've ever been intimidated by the idea of using an electric ice cream maker... don't. I promise. It's literally a machine that consists of a bowl that you put in the freezer, a paddle, and a single on/off switch that turns the ice cream maker... on and off.

    Once your custard/ice cream base is prepared and chilled, you pour the base into the frozen bowl of the ice cream maker and hit the "on" switch. That's it. Let it churn for 15-20 minutes and you've got your ice cream that's ready to be transferred into a freezer-safe container and frozen - tada!

    I use the most basic Cuisinart Ice Cream Maker and I've been using the same one for a good decade. It's never done me wrong and I don't need anything more fancy.

    What Are The Three Chocolates?

    This delicious homemade ice cream consists of three varieties of chocolate. Yup, three! First, a luxurious chocolate ice cream made with cocoa powder creates the foundation of the dish. The ice cream is dotted with chocolate chips and then layered in a freezer container with thick hot fudge, which scoops into ribbons when serving.

    Tips and Troubleshooting

    I find that making homemade ice cream is a simple and straightforward process, so don't worry! Here are some tips to help your triple chocolate ice cream be the best it can be:

    • Make sure you put the freezer bowl of your ice cream maker into the freezer a good 24 hours before you begin making the recipe.
    • Use a candy thermometer when making your ice cream base to make sure your custard is cooked to the correct temperature, but not overcooked
    • Strain the base through a fine mesh strainer to remove any lumps or clumps of cocoa powder. This will result in the creamiest ice cream!
    • Use quality ingredients! Use a high quality cocoa powder and high quality chocolate chips and hot fudge for the best flavor.

    There are several ways to vary the flavors in triple chocolate ice cream, including:

    1. Using different types of chocolate: You can experiment with using different types of chocolate, such as dark chocolate, milk chocolate, or white chocolate, to give your chocolate ice cream some new flare.

    This is a heavenly dessert that features three sources of rich chocolate flavor. With a base of creamy chocolate ice cream, crunchy chocolate chips, and a ribbon of hot fudge, this indulgent treat is a chocolate lover's dream come true.

    Ingredients

    Scale
    • 5 large egg yolks
    • ¾ cup granulated white sugar
    • 1 cup heavy cream
    • 1 cup whole milk
    • ¼ cup cocoa powder
    • 1 teaspoon pure vanilla extract
    • ½ cup dark or semi-sweet chocolate chips
    • ½ cup hot fudge, room temperature, plus more if desired

    Instructions

    1. Place the bowl of your ice cream maker in the freezer at least 24 hours in advance of churning ice cream.
    2. In a medium bowl, whisk together egg yolks with sugar. Add heavy cream, whole milk, and cocoa powder to a medium saucepan and set over medium-low heat. As it warms, whisk to combine.
    3. When milk mixture begins to steam - not boil - temper the egg and sugar mixture by slowly adding ½ cup of the hot milk mixture to the egg and sugar mixture while whisking constantly.
    4. Add tempered mixture to saucepan, stir to combine, increase heat to medium, and attach a candy thermometer to the pan.
    5. Heat mixture, stirring occasionally, until it reaches about 165F. Remove from heat and add vanilla extract. Stir.
    6. Use a fine mesh strainer to strain custard into a clean bowl. Let cool on counter for 15 minutes, and then cover with plastic wrap. Let the plastic wrap touch the surface of the custard. Chill in refrigerator for 12-24 hours.
    7. Churn custard in ice cream maker for the recommended time (usually 15-20 minutes) as the custard starts churning, sprinkle in the chocolate chips a little at a time.
    8. Layer ⅓ of soft ice cream into a 1.5 quart ice cream container. Top with a layer of hot fudge, then add half of the remaining ice cream. Layer on more hot fudge, top with remaining ice cream, close container, and freeze for 4+ hours.
